> Roasted Garlic Carrots and Potatoes
Red potatoes; 2-3 pounds - cut to about 2 inch pieces
Baby carrots; 5-6 cups
Garlic cloves; 4-8 chopped fine
Olive oil; 1/3 cup.
Sea Salt and freshly ground black pepper to taste
(You can also add other herbs such as thyme, rosemary, oregano, cumin according to what you like)
Oven setting - 400 degrees.
Mix oil, garlic, salt, pepper and any herbs.
Pour over carrots and potatoes and toss to coat.
I will sometimes add extra spices directly to the veggies and toss some more.
Cover a large baking sheet with foil for easy clean up
Roast for 20-30 min.Cooking time can vary according to amount and size of veggies.
Start checking for doneness at about 15 minutes.
