Ingredients
Dressing:
2 tsp grated lemon zest
2 tbsp. lemon juice
2 tsp Dijon mustard
1tbs honey
1 tbsp. balsamic vinegar
Salt, pepper to taste
2 tbsp. olive oil or walnut oil
Salad:
2 small zucchinis, thinly sliced or julienned
3 cups soft lettuce
¼ cup parsley chopped
¼ cup mint leaves chopped
¼ cup basil leaves ribbons
¼ cup oregano leaves
1 dozen pitted Kalamata olives
1 small red onion thinly sliced
Directions
Mix all liquids and herbs and spices together for the dressing, added to the vegetables just before serving. Enjoy!
