Eggplant Penne Arabbiata

- 8 ounces penne pasta
- 3 tablespoons olive oil
- 1 eggplant, cut into 1/2" rounds
- 1 1/2 cups Your favorite pasta sauce
Cook pasta in boiling, salted water until tender. While pasta is cooking, heat oil in a sauté pan and cook eggplant until tender. Season with salt and pepper. Drain pasta, add eggplant and toss with sauce.
